Mild bulk sausage (no casings) | 16 oz |
Shredded hash browns (frozen or fresh) | 20 oz (1 bag) |
Ground cumin | ½ tsp |
Garlic powder | ½ tsp |
Red bell pepper, finely chopped | 1 medium |
Eggs | 8 large |
Water | ½ cup |
Chipotle powder (optional) | ¼ tsp |
Salt and black pepper | To taste |
Sharp cheddar cheese, shredded | 1 cup |
Monterey Jack or another white cheese | 1 cup |
Instructions
1. Grease the Slow Cooker
Coat a 6-quart (or larger) slow cooker with cooking spray, melted butter, or coconut oil to prevent sticking.
2. Brown the Sausage
Cook the sausage in a skillet over medium heat for 8–10 minutes until browned. Drain any grease and set aside.
3. Build the Base
Evenly spread the hash browns over the bottom of the slow cooker. Layer the cooked sausage on top, then sprinkle with cumin and garlic powder.
4. Add Veggies & Seasoning
Scatter the chopped red bell pepper across the top. Season with salt, pepper, and a pinch of chipotle powder if you’d like some heat.
5. Mix Eggs
Whisk the eggs together with water in a medium bowl. Pour the egg mixture evenly over the contents in the slow cooker.
6. Add Cheese
Top with shredded cheddar and Monterey Jack cheese.
7. Cook & Enjoy
Cover and cook on LOW for 4–6 hours, until the eggs are set and the casserole is cooked through. Serve hot, with your favorite toppings like green onions, extra cheese, or a dash of hot sauce.
